Ingredients

Cream, Heavy
2 ea
Vanilla Beans, Split and scraped
5 oz
Sugar, granulated

Preparation

Simmer:
then steep the cream for 30 min to allow the full flavor of the Vanilla bean to infuse.

Egg, yolks
Temper in:
add in thirds whisking constantly.
2 oz
Hero Lemon Compound
Add:
and whisk in or use an emersion blender.
Bake:
place in a water bath and bake at 275 Degrees Fahrenheit for 45-50 minutes.
Chill:
top with granulated sugar and brule with a torch.
Heavy Cream, whipped
Garnish:
with Lemon Zest.
